I love salad. I’ve been trying different kinds of home-made dinner salads and here is one of my favorites that I make on a regular basis. I call it: “boston beet king salad”
Recipe: boston lettuce, roasted beets, king mushrooms (sautéed in butta:) roasted pine nuts, yellow and red cherry tomatoes. For the dressing I mixed my fave balsamic vinegar (I use gocce Italian balsamic) maille dijon mustard, roasted walnut oil, pinch of s&p.
